Julián Mármol, Michelin-starred chef of Yugo The Bunker in Madrid, leads the kitchen at Godai with a clear and unwavering vision: purity. For him, cooking is an art form in which each ingredient must express itself in its most authentic and essential state.

Self-taught and deeply passionate, Mármol discovered his culinary calling after completing a master’s degree in Asian markets. Drawing from his experience in Madrid, he decided to bring his Japanese universe to Menorca, blending local delicacies with meticulously refined Japanese techniques.

A Fused Essence

For Julián, “fusion without confusion” means honouring every ingredient. Red prawns, scorpion fish or Menorcan sobrasada are combined with nigiri, gyoza and sashimi through exceptional technical restraint. The result is a balanced, sophisticated cuisine free from artifice.
